Ingredients:
- 200g of mutton, cubed
- 150g of basmati rice
- 2 tablespoons of ghee
- 1 large onion, thinly sliced
- 2 cloves of garlic, minced
- 1-inch piece of ginger, grated
- 2 green chilies, slit
- 1 teaspoon of cumin seeds
- 1 teaspoon of coriander powder
- 1/2 teaspoon of garam masala
- 1/4 teaspoon of turmeric powder
- Salt to taste
- 2 cups of water
- Fresh cilantro, chopped, for garnish
- Fresh mint leaves, chopped, for garnish
Kitchen Tools Needed:
- Large pot
- Heavy bottom pan
- Spatula
- Strainer
- Measuring cups
Instructions:
- In a large pot, heat the ghee over medium heat. Add the sliced onions and sauté until golden brown.
- Add the garlic, ginger, and green chilies, cooking for another 2 minutes until fragrant.
- Stir in the cumin seeds, coriander powder, garam masala, turmeric powder, and salt, allowing the spices to bloom for about 1 minute.
- Add the mutton pieces, cooking until they are browned on all sides and well coated with the spices.
- Pour in 2 cups of water, bring to a boil, then lower the heat and let it simmer until the mutton is tender, about 30 minutes.
- While the mutton cooks, rinse the basmati rice under cold water until the water runs clear. Drain and set aside.
- Once the mutton is tender, add the rinsed basmati rice to the pot and gently stir to combine.
- Cover the pot and cook on low heat for an additional 15 minutes, or until the rice is fluffy and fully cooked.
- Turn off the heat and let it sit, covered, for 5 minutes before removing the lid.
- Fluff the biryani with a fork and garnish with chopped cilantro and mint leaves before serving.
