Ingredients:

  • 200g of mutton, cubed
  • 150g of basmati rice
  • 2 tablespoons of ghee
  • 1 large onion, thinly sliced
  • 2 cloves of garlic, minced
  • 1-inch piece of ginger, grated
  • 2 green chilies, slit
  • 1 teaspoon of cumin seeds
  • 1 teaspoon of coriander powder
  • 1/2 teaspoon of garam masala
  • 1/4 teaspoon of turmeric powder
  • Salt to taste
  • 2 cups of water
  • Fresh cilantro, chopped, for garnish
  • Fresh mint leaves, chopped, for garnish

Kitchen Tools Needed:

  • Large pot
  • Heavy bottom pan
  • Spatula
  • Strainer
  • Measuring cups

Instructions:

  • In a large pot, heat the ghee over medium heat. Add the sliced onions and sauté until golden brown.
  • Add the garlic, ginger, and green chilies, cooking for another 2 minutes until fragrant.
  • Stir in the cumin seeds, coriander powder, garam masala, turmeric powder, and salt, allowing the spices to bloom for about 1 minute.
  • Add the mutton pieces, cooking until they are browned on all sides and well coated with the spices.
  • Pour in 2 cups of water, bring to a boil, then lower the heat and let it simmer until the mutton is tender, about 30 minutes.
  • While the mutton cooks, rinse the basmati rice under cold water until the water runs clear. Drain and set aside.
  • Once the mutton is tender, add the rinsed basmati rice to the pot and gently stir to combine.
  • Cover the pot and cook on low heat for an additional 15 minutes, or until the rice is fluffy and fully cooked.
  • Turn off the heat and let it sit, covered, for 5 minutes before removing the lid.
  • Fluff the biryani with a fork and garnish with chopped cilantro and mint leaves before serving.
